I've really figured out what I like to eat for lunch and dinner. At night I try to cook enough food for dinner and lunch the next day. This has been so helpful. It is really difficult to get two children ready and worry about packing food. Here's what I combine:
Frozen broccoli
Frozen green beans
Canned tomatoes with garlic, basil, and oregano
Dried onions
Garlic and herb seasoning
Salt to taste
3.5 oz of chicken or shrimp
*Put in a large microwaveable bowl. Heat 3-4 minutes.
*For an Asian version, I add Asian dressing (Walden Farms) instead of tomatoes.
*The Asian dressing is a great marinade for turkey breasts.
